Chicken is one of the most used ingredients in meals worldwide, from American, African, Asian, and Mexican cuisine. Many religious groups consider chicken as their protein, which makes it a more popular and high demand in the public sector.
Over the past few months, chicken pastil is all over social media, different versions, and recipes are popping out. Majority of food influencers and professional chefs featured this famous chicken pastil.

Here’s the ingredients for chicken pastil from Maguindanao:
2 cups rice, washed
3 cups water
2 whole boiled chicken breasts, deboned and flaked
¼ cup minced garlic, minced
½ cup minced onion, medium minced
1 tbsp minced turmeric root, minced/ grated
4 tbsp oyster sauce
3 tbsp vinegar
2 tbsp brown sugar
4 pcs hard boiled eggs
3 pcs sliced cucumber for garnish and side condiment
Banana leaves for wrapping
Procedures:
- Boil the chicken breast with salt and pepper, then debone and shred it.
- Saute garlic, onion, and minced turmeric in oil.
- Add the shredded chicken, oyster sauce, vinegar, and sugar, and cook until crispy.
- Lay cooked turmeric rice on a banana leaf, top with chicken flakes.
- Garnish with hard boiled eggs and cucumber slices, then wrap it all in the banana leaf.
